Cooking The Truffles Fagih

People in the past they used to change the type of food because of the weather. A good example of that is the truffles or Fagih as the people in the Arabian Gulf call it. This truffles is grow after the rains and it’s found in the desert areas, the are many types of the Fagih such as Zabadi and Kalacyi which are the rarest types of it.  People who want to collect it the go to the desert in early morning so the sun light reveal any simple change is going on the surface of the sand, and when you find it must be kept in a cool dark place and best to put it in the basket and not put it in a plastic bag to avoid corruption and tastes change.  Kuwaiti  buy it with high prices but when the Fagih season is near to finish the price get lower and the good types are not found in the market.  There are many dishes made from Fagih such as meat and rice with Fagih ,  Fagih with eggs and and cooking Fagih with butter, condiments and spices. Before cooking it there is a way to clean, first step is to put in water to remove dust from it and make it easier to peeling. The second step is  to peeling the Fagih. The three is to put water and then boiling it for five to ten minutes. The four step remove out from the water and cut it to pieces. The fifth step is to is to frying it with butter and put the condiments and spices on it. Finally you can eat with bread, put it with meat and rise or add eggs to it and enjoy it.
